6. Lemons can keep apples from turning brown
We all know this problem. Shortly after cutting an apple, the fruit turns brown. This is because the cells of the apple release an enzyme called polyphenol oxidase, which reacts with oxygen and in turn causes the apple to lose its luscious fresh appearance. The good news is that lemons can help with this. Just apply a little lemon juice to apples to keep them from turning brown. The secret lies in the ascorbic acid (vitamin C) in lemons. It prevents oxidation and greatly slows down the browning process.
